Spinach, Tomato & Ricotta Frittata!

Ingredients
  1. 5 eggs (beaten)
  2. 1/2 cup egg whites
  3. 1/2 cup ricotta
  4. 1/2 tsp sea salt
  5. 1/4 tsp ground mustard
  6. 1/3 tsp black pepper
  7. 1/2 cup chopped fresh spinach
  8. 5 slices of bacon (crumbled)
  9. 6 tomato slices
  10. Grated cheese (optional)
Instructions
  1. Preheat oven to 400F and grease a 9 inch pie dish
  2. In a large mixing bowl combine: 5 beaten eggs, ½ cup egg whites, ½ cup ricotta, ½ tsp sea salt, ¼ tsp ground mustard, and ¼ tsp black pepper
  3. Whisk all ingredients together (some clumps are OK)
  4. Add ½ cup chopped fresh spinach, 5 slices cooked crumbled bacon to the egg mixture and stir in
  5. Pour the egg mixture into the prepared pie dish
  6. Place tomato slices (about 6) on top of the frittata and bake for 30 min.
  7. Remove frittata from oven and sprinkle with optional grated cheese
