Paleo/Primal Sweet Potato Salad!
How could you possibly go wrong with easy, healthy and yummy?!
- 1 sweet potato
- 2 tbsp natural yogurt
- 1 tbsp balsamic vinegar
- 1 tsp dijon mustard
- 1 tsp wholegrain mustard s&p
- Walnuts and apples (optional)
- Steam diced sweet potato until just tender
- In a separate bowl add 2 tbsp natural yogurt, 1 tbsp balsamic vinegar, 1 tsp dijon mustard and 1 tsp wholegrain mustard.
- Finally add mixture to potatoes, season w/ s&p
- Told you it was easy!
- *Want a little extra texture? Throw in some walnuts and/or apple slices!
