Garlic Grilled Scallops with Lemon
How can you go wrong with garlic, lemon and scallops?!

  1. 3 tbsp garlic, minced
  2. 2 tbsp lemon juice
  3. 3/4 cup butter
  4. 2 pounds large scallops
  5. Salt and pepper to taste
  1. Heat a pan over a medium heat, melting the butter
  2. Add the minced garlic for a minute (until fragrant)
  3. Add the scallops and cook for a few minutes on the first side (halfway cooked)
  4. Turn the scallops and finish cooking until they are firm and opaque
  5. Put the scallops aside to a plate
  6. Add the lemon juice to the hot butter and garlic in the pan (don't forget to season!)
  7. This is the fun part...serve them any way you like 'em! We love them over some garlic sauteed spinach with a dash of Parmesan cheese (steamed or roasted vegetables are also great) just add the lemon and garlic butter
