RECIPE: Almond Crusted Fish w/ Pesto Zoodles

Almond Crusted Fish w/ Pesto Zoodles (Zucchini)

Ingredients
  1. For Pesto
  2. 2 cups Arugula
  3. 3 tbsp Sliced Almonds
  4. 1/2 of a Lemon juiced
  5. 1/4 cup olive oil
  6. Dash of salt
  7. For Fish
  8. 2 tbsp Ground Almonds
  9. 2 tbsp Pesto
  10. 5 oz Cod
  11. Dash of salt
  12. For "Noodles"
  13. 1 tbsp olive oil
  14. 1 medium Zucchini (spiralized)
  15. 1/4 cup Pesto
  16. Dash of salt
  17. 1/4 cup Cherry tomatoes cut in half
Instructions
  1. Preheat oven to 350F
  2. Add the ingredients for the pesto to your food processor, blend until smooth and set aside
  3. In a small bowl mix together the 2 tbsp almond meal and 2 tbsp of the pesto
  4. Pat the cod with a paper towel placing on a baking sheet seasoning with salt
  5. Take the pesto and ground almonds and spoon it on top of the fish, pressing it down slightly to form a crust
  6. Place the fish in the oven and bake for 8-10 minutes
  7. While the fish is cooking heat the olive oil over medium heat in a skillet
  8. Add the zucchini noodles and ¼ cup pesto
  9. Sauté until the noodles are tender, about 3-4 minutes seasoning with salt to taste
  10. Dish your zoodles on a place with the fish on top and make it look extra pretty before digging in!
