Primal “Twice” Baked Cauliflower

Dear mashed potato, you have been replaced – your services are no longer needed.  Twice baked cauliflower is a great meal or healthy side dish recipe for dinner.  They’re great for any day and are super tasty and filling. Cheese, bacon, green onions…how can you go wrong?

Ingredients
  1. Cauliflower, raw, .5 head, large (6-7″ dia)
  2. Shredded Cheddar Cheese, 1 cup
  3. Fresh Chives, 2 tbsp chopped
  4. Pepper, black, .5 tsp
  5. Butter, salted, 1 tbsp
  6. Yogurt, plain, .25 cup (8 fl oz)
  7. Bacon Bits, 2 tbsp
  8. Salt, .5 tsp
  9. Garlic – minced, 1 tsp
  10. Sour Cream,  .25 cup
  11. * Unless otherwise noted, we recommend using organic, locally grown vegetables and organic grass feed meats and dairy (Primal) ingredients. Omit dairy, especially cheese ingredients, if you are Paleo.
Instructions
  1. Cook cauliflower until tender (Microwave covered with NO water added for approx 6 minutes on high).
  2. Preheat oven to 400F.
  3. Process cauliflower until smooth with food processor. Add in yogurt, sour cream, and butter and process until creamy smooth.
  4. Add remaining ingredients together in a medium bowl, fold until mixed.
  5. Use cooking spray on 4 seven ounce ramekins or other small oven safe dishes and spoon mixture into dishes.
  6. Place all small dishes on a cookie sheet for easier handling.
  7. Bake for 15 minutes on middle rack and then **broil for a few minutes until top is golden brown.
  8. Makes 4 servings
Tips
  1. * Squeeze moisture out of cauliflower with a kitchen towel or cheese cloth so that it’s more the consistency of potatoes before mixing.
  2. ** Mix a little olive oil and grated Parmesan cheese. Spread on top and broil until golden brown
